Ingredients

  • 4 6oz Salmon fillets
  • 2 tbsp White miso paste
  • 2 tbsp Mirin
  • 1 tbsp Sake
  • 1 tsp Sugar
  • 1 tsp Soy sauce
  • 1 lb Asparagus
  • 1 tsp Sesame oil

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a small bowl, whisk together the 2 tablespoons of white miso paste, 2 tablespoons of mirin, 1 tablespoon of sake, 1 teaspoon of sugar, and 1 teaspoon of soy sauce until smooth. This is your miso glaze.
  3. 3Place the 4 6oz salmon fillets onto a baking sheet that has been lined with parchment paper.
  4. 4Use a brush to evenly coat the top of each of the 4 salmon fillets with the miso glaze.
  5. 5In a separate bowl, toss the 1 lb of asparagus with 1 teaspoon of sesame oil until the asparagus is lightly coated.
  6. 6Arrange the 1 lb of asparagus on the same baking sheet around the 4 salmon fillets.
  7. 7Bake for 12 to 15 minutes. The salmon is done when it flakes easily with a fork and reaches an internal temperature of 145°F (63°C), and the asparagus should be tender-crisp.
  8. 8Serve the miso glazed salmon and asparagus immediately.
