Misir Wot (Red Lentil Stew) with Spiced Quinoa

Ingredients

  • 1 cup Red lentils
  • 3 cups Water
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 teaspoon Ginger
  • 2 tablespoons Berbere spice blend
  • 1 tablespoon Tomato paste
  • 2 tablespoons Vegetable oil
  • 1/2 teaspoon Salt
  • 1 cup Quinoa
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Cumin

Instructions

  1. 1Rinse the red lentils and set aside.
  2. 2In a pot, sauté chopped onion, garlic, and ginger in vegetable oil until softened.
  3. 3Add tomato paste and Berbere spice blend. Cook for 1-2 minutes.
  4. 4Add the red lentils and water. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.
  5. 5Season with salt to taste.
  6. 6While the lentils are cooking, prepare the quinoa. Rinse the quinoa.
  7. 7In a saucepan, combine quinoa with 2 cups of water. Add turmeric and cumin.
  8. 8Bring to a boil, then reduce heat and simmer for 15 minutes, or until all the water is absorbed.
  9. 9Fluff the quinoa with a fork.
  10. 10Serve the Misir Wot over the spiced quinoa.
