Ingredients

  • 1.5 cups Red Lentils
  • 4 cups Water
  • 1 medium Red Onion
  • 4 cloves Garlic
  • 1 tablespoon Ginger
  • 3 tablespoons Berbere Spice Blend
  • 3 tablespoons Niter Kibbeh (Spiced Clarified Butter)
  • 1 tablespoon Tomato Paste
  • 0.5 cup Vegetable Broth
  • 1 teaspoon Salt

Instructions

  1. 1Rinse the red lentils in a colander.
  2. 2In a pot, sauté finely chopped red onion in niter kibbeh until softened.
  3. 3Add minced garlic, ginger, and berbere spice blend. Cook for 1-2 minutes.
  4. 4Stir in tomato paste and cook for another minute.
  5. 5Add the red lentils, water, and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender and the stew has thickened.
  6. 6Season with salt to taste. Serve hot.
