Misir Wot (Red Lentil Stew)

Ingredients

  • 1.5 cups Red Lentils
  • 1 large Red Onion
  • 3 cloves Garlic
  • 1 tablespoon Ginger
  • 3 tablespoons Berbere Spice Blend
  • 2 tablespoons Tomato Paste
  • 3 cups Vegetable Broth
  • 2 tablespoons Olive Oil
  • 8 pieces Injera Bread

Instructions

  1. 1Rinse the red lentils under cold water.
  2. 2In a pot, sauté chopped red onion in olive oil until softened.
  3. 3Add minced garlic, grated ginger, and berbere spice blend. Cook for 2 minutes.
  4. 4Stir in tomato paste and cook for another minute.
  5. 5Add the rinsed red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender.
  6. 6Serve the misir wot hot with injera bread on the side.
