Ingredients

  • 1.5 cups Red lentils
  • 3 cups Water
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 tablespoon Ginger
  • 2 tablespoons Berbere spice blend
  • 2 tablespoons Vegetable oil
  • 1 tablespoon Tomato paste
  • 8 pieces Injera bread

Instructions

  1. 1Rinse the red lentils thoroughly.
  2. 2In a pot, sauté chopped onion, garlic, and ginger in vegetable oil until softened.
  3. 3Add berbere spice blend and tomato paste; cook for 1 minute.
  4. 4Add the lentils and water. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  5. 5Adjust seasoning to taste. Serve hot with injera bread.
