Misir Wot (Ethiopian Red Lentil Stew) - Dairy-Free

A classic Ethiopian lentil stew (Misir Wot), made entirely dairy-free and vegan. The rich and spicy flavor comes from the berbere spice blend and slow cooking, not from any dairy products. Served with injera.

Ingredients

  • 1.5 cups Red lentils
  • 1 large Onion
  • 3 cloves Garlic
  • 2 tbsp Berbere spice blend
  • 4 cups Vegetable broth
  • 1 tbsp Tomato paste
  • 2 tbsp Olive oil
  • 8 pieces Injera bread

Instructions

  1. 1Rinse the red lentils in a fine-mesh sieve.
  2. 2Heat olive oil in a pot over medium heat.
  3. 3Add chopped onion and cook until softened, about 5 minutes.
  4. 4Add minced garlic and cook for another minute until fragrant.
  5. 5Stir in the berbere spice blend and tomato paste. Cook for 1 minute.
  6. 6Add the rinsed red lentils and vegetable broth. Bring to a boil.
  7. 7Reduce heat, cover, and simmer for about 25-30 minutes, or until the lentils are tender and the stew has thickened.
  8. 8Serve hot with injera bread.
