Ingredients

  • 1.5 cups Red Lentils
  • 1 large Onion
  • 3 cloves Garlic
  • 2 tablespoons Berbere Spice Blend
  • 4 cups Vegetable Broth
  • 1 tablespoon Tomato Paste
  • 2 tablespoons Olive Oil
  • 8 pieces Injera Bread

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add chopped onion and cook until softened, about 5 minutes.
  3. 3Stir in minced garlic and Berbere spice blend. Cook for 1 minute.
  4. 4Add tomato paste and cook for another minute.
  5. 5Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender and the stew has thickened.
  6. 6Serve hot with injera bread.
