Ingredients

  • 1.5 cups Red lentils
  • 4 cups Water
  • 1 large Red onion
  • 4 cloves Garlic
  • 3 tablespoons Berbere spice blend
  • 1 tablespoon Tomato paste
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 12 pieces Injera bread

Instructions

  1. 1Rinse the red lentils thoroughly.
  2. 2Finely chop the red onion and mince the garlic.
  3. 3In a large pot, sauté the red onion in vegetable oil over medium heat until softened, about 5 minutes.
  4. 4Add the garlic and berbere spice blend to the pot and cook for 1 minute, stirring constantly.
  5. 5Stir in the tomato paste and cook for another minute.
  6. 6Add the rinsed red lentils and water to the pot. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender and the stew has thickened.
  7. 7Season with salt to taste.
  8. 8Serve hot with injera bread.
