Misir Wat (Red Lentil Stew)

Ingredients

  • 1 cup Red lentils
  • 3 cups Water
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 2 tbsp Berbere spice blend
  • 2 tbsp Vegetable oil
  • 1 tbsp Tomato paste
  • 1/2 tsp Salt

Instructions

  1. 1Rinse the red lentils thoroughly.
  2. 2In a pot, sauté chopped onion in vegetable oil until softened.
  3. 3Add minced garlic, ginger, and berbere spice blend. Cook for 1 minute until fragrant.
  4. 4Stir in tomato paste and cook for another minute.
  5. 5Add the rinsed lentils and water. Bring to a boil, then reduce heat and simmer for 25 minutes, or until the lentils are tender and the stew has thickened.
  6. 6Season with salt to taste. Serve hot with injera.
