Ingredients

  • 1 cup Rice
  • 2 cups Coconut Milk
  • 1/2 tsp Salt
  • 1/4 cup chopped Red Onion
  • 2 chopped Green Chilies
  • 1 tbsp Lime Juice
  • 1/4 tsp Salt

Instructions

  1. 1Measure 1 cup of rice into a fine-mesh sieve and rinse it thoroughly under cold running water until the water runs clear.
  2. 2In a large heavy-bottomed pot, combine the rinsed 1 cup of rice, 2 cups of coconut milk, and 1/2 teaspoon of salt.
  3. 3Place the pot over medium-high heat and bring the mixture to a boil, stirring occasionally. Once boiling, immediately reduce the heat to low, cover the pot tightly, and simmer for 20 to 25 minutes. The rice is cooked when it is tender and all the 2 cups of coconut milk have been absorbed.
  4. 4While the rice is simmering, prepare the Lunu Miris. In a small bowl, combine the 1/4 cup of chopped red onion, 2 chopped green chilies, 1 tablespoon of lime juice, and 1/4 teaspoon of salt. Stir everything together until well mixed.
  5. 5Once the milk rice is cooked, remove the pot from the heat and let it stand, covered, for 5 minutes. This allows the rice to finish steaming.
  6. 6Serve the warm milk rice immediately, accompanied by the prepared Lunu Miris on the side.
