Migas (Gluten-Free Bread Crumbs)

Ingredients

  • 4 cups Gluten-free bread, stale, cubed
  • 100 g Chorizo, Spanish, diced
  • 100 g Bacon, diced
  • 4 large Eggs
  • 2 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Soak the gluten-free bread cubes in a little water until slightly softened. Squeeze out excess water.
  2. 2In a large skillet, heat olive oil over medium heat. Add bacon and chorizo and cook until crispy.
  3. 3Add garlic and paprika to the skillet and cook for 1 minute until fragrant.
  4. 4Add the soaked gluten-free bread cubes to the skillet and cook, stirring frequently, until golden brown and crispy, about 10 minutes.
  5. 5Push the gluten-free bread crumb mixture to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through.
  6. 6Mix the scrambled eggs with the gluten-free bread crumbs and season with salt and pepper.
  7. 7Serve immediately.
