Migas con Huevo (Spanish Fried Bread with Eggs)

A traditional Spanish breakfast of fried breadcrumbs with eggs, chorizo (optional), and pimientos. A great way to use up stale bread.

Ingredients

  • 500 g Stale Bread
  • 0.5 cup Olive Oil
  • 3 cloves Garlic
  • 1 tsp Smoked Paprika
  • 4 large Eggs
  • 0.25 cup Pimientos
  • 0.5 tsp Salt

Instructions

  1. 1Cut the stale bread into small cubes.
  2. 2Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. 3Add the bread cubes to the skillet and cook until golden brown and crispy, stirring frequently, about 10 minutes.
  4. 4Stir in smoked paprika and salt.
  5. 5Push the breadcrumbs to one side of the skillet and crack the eggs into the empty space. Cook until the eggs are set to your liking.
  6. 6Stir the eggs into the breadcrumbs and mix well.
  7. 7Serve immediately, garnished with pimientos.
