Ingredients

  • 1 cup Cornmeal
  • 1 cup All-Purpose Flour
  • 1/2 cup Sugar
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Plant-Based Milk (e.g., Soy, Almond)
  • 1/2 cup Applesauce
  • 1/4 cup Vegetable Oil

Instructions

  1. 1Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  2. 2In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. 3In a separate bowl, combine plant-based milk, applesauce, and vegetable oil.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. 5Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
