Ingredients

  • 1 cup Red Lentils
  • 0.5 cup Fine Bulgur
  • 1 medium Onion
  • 2 tbsp Tomato Paste
  • 2 tbsp Olive Oil
  • 0.25 cup Fresh Parsley
  • 2 stalk Green Onions
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1Rinse the red lentils and bulgur.
  2. 2Cook the red lentils in 2 cups of water until soft, about 15-20 minutes. Drain any excess water.
  3. 3While the lentils are cooking, dice the onion. Finely chop the parsley and green onions.
  4. 4In a large bowl, combine the cooked lentils, bulgur, onion, tomato paste, olive oil, parsley, green onions, cumin, paprika, salt, and pepper. Mix well.
  5. 5Let the mixture cool slightly. Form into small patties.
  6. 6Heat a little olive oil in a skillet over medium heat. Cook the patties until browned on both sides, about 5-7 minutes per side.
  7. 7Serve warm or at room temperature.
