Ingredients

  • 1 cup Red Lentils
  • 0 cup Fine Bulgur
  • 0.5 cup Quinoa Flakes
  • 1 medium Onion
  • 2 tablespoons Tomato Paste
  • 3 tablespoons Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Mint
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 0.5 cup Fresh Parsley
  • 2 stalks Green Onions

Instructions

  1. 1Rinse the red lentils and quinoa flakes and cook in a pot with 2 cups of water until the lentils are soft and the water is absorbed (about 15 minutes).
  2. 2While the lentils are cooking, finely chop the onion and sauté in olive oil until softened.
  3. 3Add the tomato paste, cumin, mint, paprika, salt, and pepper to the onions and cook for another minute.
  4. 4In a large bowl, combine the cooked lentils, sautéed onion mixture, chopped parsley, and green onions.
  5. 5Mix well and let the mixture cool slightly.
  6. 6Shape the mixture into small patties.
  7. 7Serve the lentil patties at room temperature or slightly chilled.
