Ingredients

  • 1 cup Red Lentils
  • 6 cups Vegetable Broth
  • 1 medium Onion
  • 1 medium Carrot
  • 1 tablespoon Tomato Paste
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Mint
  • 0.5 teaspoon Red Pepper Flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 1 tablespoon Lemon Juice

Instructions

  1. 1Rinse the red lentils in a colander.
  2. 2Dice the onion and carrot.
  3. 3Heat olive oil in a large pot over medium heat.
  4. 4Add the onion and carrot and cook until softened, about 5 minutes.
  5. 5Add the tomato paste and cook for 1 minute more.
  6. 6Add the red lentils, vegetable broth, dried mint, red pepper flakes, salt, and black pepper to the pot.
  7. 7Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the lentils are tender.
  8. 8Use an immersion blender to blend the soup until smooth (optional).
  9. 9Stir in the lemon juice before serving.
