Menemen with Tofu Scramble

Ingredients

  • 1 block Firm Tofu
  • 2 tbsp Olive Oil
  • 1 medium Green Bell Pepper
  • 1/2 medium Onion
  • 1 28 oz can Canned Diced Tomatoes
  • 1/2 tsp Red Pepper Flakes
  • 1/2 tsp Cumin
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Fresh Parsley

Instructions

  1. 1Press the tofu to remove excess water, then crumble it into small pieces.
  2. 2Heat olive oil in a large skillet over medium heat.
  3. 3Add diced green bell pepper and onion to the skillet and sauté until softened, about 5 minutes.
  4. 4Add the crumbled tofu to the skillet and cook for 5-7 minutes, stirring occasionally, until it begins to brown.
  5. 5Pour in the canned diced tomatoes, red pepper flakes, and cumin. Season with salt and black pepper.
  6. 6Bring to a simmer and cook for 10 minutes, stirring occasionally, until the sauce has thickened.
  7. 7Garnish with fresh parsley before serving.
