Ingredients

  • 1 lb Rice noodles or Sweet Potato Noodles
  • 1 lb Chicken or Tofu
  • 2 large Eggs
  • 1/2 cup Shrimp
  • 2 cups Bean sprouts
  • 1 medium Potatoes
  • 1 cup Cabbage
  • 1 medium Onion
  • 3 cloves Garlic
  • 2 tbsp Chili paste
  • 2 tbsp Ketchup
  • 2 tbsp Soy sauce (gluten-free)
  • 1 tbsp Oyster sauce (gluten-free)

Instructions

  1. 1Cook the 1 lb of rice noodles or sweet potato noodles in a large pot of boiling water until tender, about 3-5 minutes. Drain the noodles and set aside.
  2. 2Cut the 1 lb of chicken or tofu into 1-inch pieces. Heat a 12-inch skillet over medium-high heat (375°F/190°C). Add the chicken or tofu and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. If using chicken, ensure it reaches an internal temperature of 165°F (74°C). Remove the chicken or tofu from the skillet and set aside.
  3. 3Peel and boil the 1 medium potato in a small pot of water until fork-tender, about 15-20 minutes. Drain the potato and cut it into 1/2-inch cubes.
  4. 4In the same 12-inch skillet, add a tablespoon of cooking oil (not listed, assumed) and heat over medium heat (300°F/150°C). Finely mince the 3 cloves of garlic and dice the 1 medium onion. Add the onion and garlic to the skillet and sauté for 3-4 minutes until softened and fragrant.
  5. 5Stir in the 2 tbsp of chili paste, 2 tbsp of ketchup, 2 tbsp of gluten-free soy sauce, and 1 tbsp of gluten-free oyster sauce. Cook for 1 minute, stirring constantly, until the sauces are combined and slightly thickened.
  6. 6Add the cooked chicken or tofu, the cubed potato, the 1/2 cup of shrimp, the 1 cup of cabbage (shredded), and the 2 cups of bean sprouts to the skillet. Stir everything together and cook for 2-3 minutes until the cabbage is slightly wilted and the shrimp is pink and opaque.
  7. 7Add the cooked noodles to the skillet. Push all the ingredients to one side of the skillet. Crack the 2 large eggs into the empty side of the skillet. Scramble the eggs until they are just cooked, about 1-2 minutes.
  8. 8Mix the scrambled eggs with the rest of the ingredients in the skillet. Stir everything together until well combined and heated through, about 1-2 minutes. Serve hot.
