Ingredients

  • 4 large Bell peppers
  • 1 lb Ground lamb
  • 1 cup Cooked rice
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 can Diced tomatoes
  • 1/4 cup Fresh parsley
  • 2 tbsp Fresh mint
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Cut the tops off the bell peppers and remove the seeds.
  3. 3In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened.
  4. 4Add ground lamb and cook until browned, breaking it up with a spoon.
  5. 5Stir in diced tomatoes, cooked rice, parsley, mint, cumin, paprika, salt, and pepper. Simmer for 5 minutes.
  6. 6Stuff the bell peppers with the lamb mixture.
  7. 7Place the stuffed bell peppers in a baking dish and bake for 45 minutes, or until the peppers are tender.
  8. 8Serve warm.
