Ingredients

  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1 medium Cucumber
  • 1 cup Cherry Tomatoes
  • 1/2 cup Kalamata Olives
  • 1/4 medium Red Onion
  • 1/2 cup Feta Cheese (Optional)
  • 3 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice
  • 1/4 cup Fresh Parsley
  • 2 tablespoons Fresh Mint
  • 1 clove Garlic
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Rinse the quinoa and combine it with vegetable broth in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and let cool.
  2. 2Dice the cucumber, cherry tomatoes, red onion and feta (if using).
  3. 3In a small bowl, whisk together olive oil, lemon juice, parsley, mint, garlic, salt, and pepper to make the vinaigrette.
  4. 4In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, olives, and red onion.
  5. 5Pour the vinaigrette over the salad and toss to combine.
  6. 6If using, gently stir in the feta cheese.
  7. 7Serve chilled or at room temperature.
