Ingredients

  • 2 cups Water
  • 8 oz Halloumi Cheese
  • 1/2 cup Sun-dried Tomatoes
  • 1/2 cup Kalamata Olives
  • 1 medium Cucumber
  • 1/4 small Red Onion
  • 1/4 cup Fresh Parsley
  • 1/4 cup Fresh Mint
  • 3 tablespoons Lemon Juice
  • 3 tablespoons Olive Oil
  • 1 clove Garlic
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Rinse the quinoa in a fine-mesh sieve.
  2. 2Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes, or until all water is absorbed.
