Ingredients

  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 28 ounces Canned Crushed Tomatoes
  • 5 ounces Fresh Spinach
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 8 large Eggs
  • 4 ounces Feta Cheese
  • 2 tablespoons Fresh Parsley

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Heat olive oil in a large oven-safe skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. 3Add garlic and cook for 1 minute more.
  4. 4Stir in crushed tomatoes, spinach, oregano, salt, and pepper. Cook until spinach wilts, about 3 minutes.
  5. 5Make 8 wells in the tomato sauce with a spoon. Crack an egg into each well.
  6. 6Crumble feta cheese over the top.
  7. 7Bake in the preheated oven for 15-20 minutes, or until eggs are set to your liking.
  8. 8Garnish with fresh parsley and serve immediately.
