Matoke (Plantain Stew)

Ingredients

  • 6 medium Green plantains
  • 1 medium Onion
  • 2 medium Tomatoes
  • 3 cloves Garlic
  • 1 tbsp Ginger
  • 2 cups Vegetable broth
  • 2 tbsp Cooking oil
  • 0.75 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Cilantro

Instructions

  1. 1Peel and chop green plantains into chunks.
  2. 2Heat cooking oil in a pot over medium heat.
  3. 3Add chopped onion and sauté until translucent.
  4. 4Add minced garlic and ginger, sauté for 1 minute.
  5. 5Add chopped tomatoes and cook until softened.
  6. 6Add plantains and vegetable broth. Bring to a boil.
  7. 7Reduce heat to low, cover, and simmer for 25-30 minutes, or until plantains are tender.
  8. 8Season with salt and black pepper.
  9. 9Garnish with fresh cilantro and serve hot.
