Mate Cocido with Dairy-Free Pastries

Ingredients

  • 2 Yerba mate tea bags
  • 2 cups Water
  • to taste Dairy-free sweetener (e.g., agave, maple syrup)
  • 2 Dairy-free croissants

Instructions

  1. 1Pour the 2 cups of water into a 2-quart saucepan. Place the saucepan on a burner and turn the heat to high. Bring the water to a rolling boil, which means large, continuous bubbles are breaking on the surface, for about 5 minutes.
  2. 2Once the water is boiling, immediately remove the saucepan from the heat. Add the 2 Yerba mate tea bags to the hot water and let them steep for 3 to 5 minutes, until the water turns a dark amber color.
  3. 3Carefully remove and discard the 2 Yerba mate tea bags from the saucepan. Stir in dairy-free sweetener (such as agave or maple syrup) to taste, until it dissolves completely.
  4. 4While the mate cocido is steeping, prepare the 2 dairy-free croissants. To warm them in an oven, preheat the oven to 350°F (175°C), place the croissants on a baking sheet, and heat for 3 to 5 minutes until they are slightly warm and soft. Alternatively, to warm them in a microwave, place the croissants on a microwave-safe plate and heat for 1 to 2 minutes on high power until they are slightly warm and soft.
  5. 5Pour the hot mate cocido into two mugs. Serve immediately alongside the warmed 2 dairy-free croissants.
