Ingredients

  • 2 cups Cooked Njahi (Black Beans), drained
  • 1/2 medium Onion, finely chopped
  • 1/4 cup Cilantro, chopped
  • 1 teaspoon Ginger, grated
  • 2 cloves Garlic, minced
  • 1/4 teaspoon Chili Powder
  • 1/4 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/4 cup Chickpea Flour (Besan)
  • 2 cups Vegetable Oil, for frying

Instructions

  1. 1In a large bowl, mash the cooked Njahi beans until smooth.
  2. 2Add onion, cilantro, ginger, garlic, chili powder, cumin, and salt to the mashed beans.
  3. 3Mix well to combine.
  4. 4Stir in the chickpea flour to bind the mixture.
  5. 5Heat vegetable oil in a deep frying pan over medium heat.
  6. 6Form the bean mixture into small patties.
  7. 7Carefully drop the patties into the hot oil and fry for 3-4 minutes on each side, until golden brown.
  8. 8Remove and drain on paper towels. Serve warm.
