Ingredients

  • 1.5 cups Rice Flour
  • 0.5 cup Tapioca Starch
  • 0.5 cup Sugar
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 Egg
  • 1.5 cups Water
  • 2 tbsp Unsalted Butter
  • 2 tbsp Chocolate Sprinkles
  • 0.5 cup Shredded Cheese

Instructions

  1. 1In a bowl, whisk together rice flour, tapioca starch, sugar, baking powder, and salt.
  2. 2Add egg and water, whisking until smooth.
  3. 3Let the batter rest for 30 minutes.
  4. 4Heat a non-stick skillet or griddle over medium heat.
  5. 5Pour about 1/2 cup of batter onto the skillet and spread it into a thin circle.
  6. 6Cook until bubbles form and the edges are set. Cover the skillet and cook for another 2-3 minutes.
  7. 7Remove from heat and spread with butter, chocolate sprinkles, and shredded cheese.
  8. 8Fold in half and serve immediately.
