Ingredients

  • 4 6 oz Salmon fillets
  • 1/4 cup Maple syrup
  • 2 tablespoons Soy sauce
  • 1 tablespoon Dijon mustard
  • 1.5 lbs Potatoes
  • 2 tablespoons Olive oil
  • 1 tablespoon Rosemary
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Cut potatoes into 1-inch pieces, toss with olive oil, rosemary, salt, and pepper. Spread on a baking sheet.
  3. 3Bake potatoes for 20 minutes.
  4. 4While potatoes are baking, whisk together maple syrup, soy sauce, and Dijon mustard.
  5. 5Place salmon fillets on a separate baking sheet lined with parchment paper. Brush with maple glaze.
  6. 6Add salmon to the oven with the potatoes and bake for the last 10-12 minutes, or until salmon is cooked through and flakes easily with a fork.
