Mango Sticky Rice Spring Rolls

A fun and deconstructed take on classic mango sticky rice, using rice paper wrappers for a light and refreshing snack. Sweet coconut sticky rice and fresh mango slices rolled into spring rolls and served with a drizzle of coconut cream.

Ingredients

  • 1 cup Sweet Rice (Glutinous Rice)
  • 1 can Coconut Milk
  • 1/4 cup Sugar
  • 1/4 tsp Salt
  • 2 large Mango
  • 12 each Rice Paper Wrappers
  • 1 tbsp Sesame Seeds

Instructions

  1. 1Rinse the sweet rice and soak in water for at least 2 hours, or preferably overnight.
  2. 2Drain the rice and steam over medium heat for 20 minutes, or until cooked through and sticky.
  3. 3While the rice is steaming, in a saucepan, heat coconut milk, sugar, and salt over low heat until sugar is dissolved. Do not boil.
  4. 4Pour the coconut milk mixture over the cooked rice and stir gently to combine. Let it sit for 15 minutes to absorb the liquid.
  5. 5Peel and slice the mango into thin strips.
  6. 6Dip a rice paper wrapper in warm water for a few seconds until softened.
  7. 7Place a spoonful of coconut sticky rice and a few slices of mango in the center of the wrapper.
  8. 8Fold the sides of the wrapper inward and roll tightly to form a spring roll.
  9. 9Repeat with remaining wrappers, rice, and mango.
  10. 10Sprinkle with sesame seeds and serve with extra coconut cream, if desired.
