Ingredients

  • 2 cups Frozen Mango Chunks
  • 1 medium Avocado, ripe
  • 0.5 cup Coconut Milk
  • 1 tablespoon Lime Juice
  • 2 tablespoons Toasted Coconut Flakes
  • 1 tablespoon Chia Seeds

Instructions

  1. 1Place the 2 cups of frozen mango chunks, 1 ripe avocado, 0.5 cup of coconut milk, and 1 tablespoon of lime juice into a blender.
  2. 2Blend these ingredients on high speed for 30-60 seconds, or until the mixture is completely smooth and creamy. If the mixture is too thick, add a tiny bit more coconut milk, 1 tablespoon at a time, until it reaches your desired consistency.
  3. 3While the smoothie is blending, place a small, dry skillet over medium heat (350°F / 175°C).
  4. 4Add the 2 tablespoons of toasted coconut flakes to the warm skillet. Stir them constantly for 1-3 minutes, until they are lightly golden brown and smell fragrant. Watch them closely as they can burn quickly.
  5. 5Pour the blended smoothie mixture evenly into two serving bowls.
  6. 6Sprinkle the toasted coconut flakes you just prepared over the top of the smoothie in each bowl.
  7. 7Finally, sprinkle the 1 tablespoon of chia seeds over the toasted coconut flakes in each bowl.
  8. 8Serve the smoothie bowls immediately.
