Mandioca Frita (Fried Cassava)

Ingredients

  • 1 lb Cassava (Mandioca/Yuca)
  • 3 cups Vegetable oil
  • 1 tsp Salt

Instructions

  1. 1Peel the 1 lb of Cassava (Mandioca/Yuca) and cut it into fry shapes, about 1/2 inch thick.
  2. 2Place the cut cassava in a large pot and cover with water. Add 1 tsp of Salt. Bring to a boil and cook for 15 minutes, or until the cassava is slightly tender when poked with a fork. Drain the cassava very well.
  3. 3Pour the 3 cups of Vegetable oil into a large, heavy-bottomed pot. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  4. 4Carefully add the drained cassava to the hot oil, being careful not to overcrowd the pot. Fry for 5-7 minutes, or until the cassava is golden brown and crispy. You will hear the frying sound become less intense as it cooks.
  5. 5Remove the fried cassava from the oil using a slotted spoon and place it on a plate lined with paper towels to drain any excess oil.
  6. 6Sprinkle the drained cassava with 1 tsp of Salt immediately after removing it from the oil.
  7. 7Serve the Mandioca Frita hot.
