Ingredients

  • 1 small Green Cabbage
  • 0.5 pound Ground Lamb
  • 0.5 cup Long Grain Rice
  • 0.5 medium Onion
  • 0.25 cup Fresh Parsley
  • 0.25 cup Fresh Mint
  • 2 tablespoons Tomato Paste
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 cups Water

Instructions

  1. 1Carefully remove the cabbage leaves, blanch them in boiling water for a few minutes until softened. Trim the thickest part of the rib from each leaf.
  2. 2In a bowl, combine ground lamb, rice, chopped onion, parsley, mint, tomato paste, lemon juice, olive oil, salt, and pepper. Mix well.
  3. 3Place a small amount of the filling (about 1 tablespoon) on each cabbage leaf. Roll up tightly, tucking in the sides as you go.
  4. 4Line the bottom of a pot with a few extra cabbage leaves to prevent sticking.
  5. 5Arrange the stuffed cabbage rolls tightly in the pot. Pour water over the rolls. Bring to a simmer, then cover and cook over low heat for 45 minutes, or until the rice is cooked through and the cabbage is tender.
  6. 6Let the cabbage rolls cool slightly before serving.
