Mafé (Peanut Stew) with Beef

Mafé is a hearty West African stew made with beef and a rich peanut-based sauce. This version uses tomato and sweet potato for a satisfying and flavorful meal. Because of the peanut content, this may not be school safe.

Ingredients

  • 1.5 lbs Beef stew meat
  • 1 cup Peanut butter
  • 6 oz Tomato paste
  • 1 can Diced tomatoes
  • 1 large Onion
  • 1 large Sweet potato
  • 3 cloves Garlic
  • 4 cups Beef broth
  • 2 tbsp Vegetable oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 cups Rice

Instructions

  1. 1Heat vegetable oil in a large pot over medium heat. Add the beef stew meat and brown on all sides.
  2. 2Add the chopped onion and garlic to the pot and cook until softened.
  3. 3Stir in the tomato paste, diced tomatoes, peanut butter, and beef broth.
  4. 4Add the peeled and cubed sweet potato to the pot.
  5. 5Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until the beef is tender and the sweet potatoes are cooked through.
  6. 6Season with salt and pepper to taste.
  7. 7Serve hot over rice.
