Mafé (Beef Stew with Peanut Sauce)

A hearty and flavorful West African stew made with beef, vegetables, and a rich peanut sauce. Recipe adjusted to be dairy-free by using coconut milk.

Ingredients

  • 1.5 lbs Beef stew meat
  • 1 cup Peanut butter (natural, unsweetened)
  • 1 can Coconut milk
  • 4 tbsp Tomato paste
  • 1 large Onion
  • 3 cloves Garlic
  • 1 large Sweet potato
  • 2 medium Carrot
  • 1 cube Beef bouillon cube
  • 2 tbsp Vegetable oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Place a large heavy-bottomed pot or Dutch oven on the stove over medium-high heat (175-200°C / 350-400°F). Add the 2 tablespoons of vegetable oil to the pot. Once the oil is shimmering, carefully add the 1.5 lbs of beef stew meat to the pot. Brown the beef on all sides, which should take about 5-7 minutes total. Do not overcrowd the pot; brown in batches if necessary.
  2. 2Remove the browned beef from the pot and set it aside on a plate. Add the 1 large chopped onion and 3 cloves of minced garlic to the same pot. Sauté the onion and garlic, stirring occasionally, until they are softened and the onion is translucent, about 5-7 minutes.
  3. 3Stir in the 4 tablespoons of tomato paste. Cook the tomato paste, stirring constantly, for 2-3 minutes until it darkens slightly in color. This helps to deepen its flavor.
  4. 4Add the 1 cup of natural, unsweetened peanut butter, the 1 can of coconut milk, the 1 beef bouillon cube, the 1 teaspoon of salt, and the 0.5 teaspoon of black pepper to the pot. Stir everything together vigorously until the peanut butter is fully incorporated and the sauce is smooth.
  5. 5Return the browned 1.5 lbs of beef stew meat to the pot. Add the 1 large peeled and cubed sweet potato and the 2 peeled and sliced carrots to the pot. Stir to coat the beef and vegetables in the peanut sauce.
  6. 6Bring the mixture in the pot to a gentle simmer over medium heat. Once simmering, reduce the heat to low, cover the pot tightly with a lid, and let it cook for 1.5 to 2 hours. Check occasionally to ensure it is not sticking. The mafé is ready when the beef is fork-tender and the sweet potato and carrots are easily pierced with a fork.
