Ingredients

  • 1 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 cup Granulated Sugar
  • 1/4 cup Unsweetened Applesauce
  • 1/2 cup Melted Butter
  • 1 tsp Lemon Zest
  • 1/2 tsp Vanilla Extract

Instructions

  1. 1Preheat oven to 375°F (190°C). Grease and flour a madeleine pan.
  2. 2In a bowl, whisk together flour, baking powder, and salt.
  3. 3In a separate bowl, cream together sugar and applesauce until light and fluffy.
  4. 4Gradually add the melted butter, lemon zest, and vanilla extract to the sugar mixture. Mix well.
  5. 5Add the dry ingredients to the wet ingredients and mix until just combined (do not overmix).
  6. 6Fill each madeleine mold about 3/4 full.
  7. 7Bake for 10-12 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. 8Let the madeleines cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
