Ingredients

  • 1 pound Gluten-free macaroni pasta
  • 2 medium Potatoes, diced
  • 2 medium Onions, sliced
  • 1 cup Heavy cream
  • 1.5 cups Gruyère cheese, grated
  • 1/2 cup Apple sauce
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

  1. 1Preheat your oven to 400°F (200°C). Slice the 2 medium onions into thin rings. In a large skillet (e.g., 10-inch or 12-inch), melt the 2 tablespoons of butter over medium heat, then add the sliced 2 medium onions and cook for 15-20 minutes, stirring occasionally, until they are deeply golden brown and caramelized. Remove the onions from the skillet and set them aside.
  2. 2Peel and dice the 2 medium potatoes into 1/2-inch cubes. Place the diced 2 medium potatoes in a medium pot and cover them with cold water. Bring the water to a boil over high heat, then reduce the heat to medium and simmer for 10-15 minutes, or until the potato cubes are tender when pierced with a fork. Carefully drain the water from the pot and set the cooked potatoes aside.
  3. 3In a large pot (e.g., 6-quart), bring 4 quarts of water to a rolling boil over high heat. Add the 1 teaspoon of salt to the boiling water, then add the 1 pound of gluten-free macaroni pasta and cook for 8-10 minutes, or until the pasta is al dente (tender but still firm to the bite). Carefully drain the water from the pot and set the cooked macaroni aside.
  4. 4In a large mixing bowl, combine the cooked 1 pound of gluten-free macaroni pasta, the cooked 2 medium potatoes, the 1 cup of heavy cream, and the 1.5 cups of grated Gruyère cheese. Add the 1/2 teaspoon of black pepper and stir gently until all ingredients are evenly mixed.
  5. 5Transfer the macaroni and potato mixture into a 9x13-inch baking dish. Bake in the preheated oven at 400°F (200°C) for 15-20 minutes, or until the cheese is melted, the cream is bubbly, and the top is lightly golden.
