Ingredients

  • 1 lb Macaroni pasta
  • 2 medium Potatoes
  • 2 medium Onion
  • 2 cloves Garlic
  • 3 cups Vegetable broth
  • 1/2 cup Nutritional yeast
  • 2 tablespoons Tapioca starch
  • 1/2 cup Unsweetened applesauce
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 cup Fried onions

Instructions

  1. 1Preheat your oven to 375°F (190°C). Bring a large pot of water to a rolling boil. Add the 1 lb Macaroni pasta and cook for 8-10 minutes, stirring occasionally, until the pasta is al dente (tender but still firm to the bite). Drain the pasta thoroughly and set it aside.
  2. 2Peel the 2 medium Potatoes and cut them into 1/2-inch cubes. Peel the 2 medium Onion and chop them into 1/4-inch pieces. Peel and mince the 2 cloves Garlic.
  3. 3Heat the 2 tablespoons Olive oil in a large heavy-bottomed pot (e.g., a 5-quart Dutch oven or similar) over medium heat. Add the chopped 2 medium Onion and minced 2 cloves Garlic; sauté for 5-7 minutes, stirring occasionally, until the onion pieces are softened and translucent. Add the 1/2-inch cubed 2 medium Potatoes and 3 cups Vegetable broth to the pot, then bring the mixture to a boil over medium-high heat.
  4. 4Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the potato cubes are very tender and easily pierced with a fork. While the potatoes simmer, measure the 1/2 cup Nutritional yeast, 2 tablespoons Tapioca starch, 1/2 cup Unsweetened applesauce, 1 teaspoon Salt, and 1/2 teaspoon Black pepper into a blender.
  5. 5Carefully transfer the hot potato mixture from the pot to the blender with the other sauce ingredients. Secure the lid and blend on high speed for 1-2 minutes, until the sauce is completely smooth and creamy, with no visible potato lumps.
  6. 6Pour the smooth sauce from the blender over the drained 1 lb Macaroni pasta in the large pot. Stir well with a spoon until the pasta is evenly coated with the sauce, then transfer the entire mixture into a 9x13 inch baking dish (or similar 3-quart capacity). Bake in the preheated oven at 375°F (190°C) for 20-25 minutes, or until the sauce is bubbly around the edges and slightly golden on top.
  7. 7Carefully remove the baking dish from the oven. Sprinkle the 1/2 cup Fried onions evenly over the top of the baked pasta and serve immediately.
