Ingredients

  • 1 lb Beef sirloin
  • 1 large Red onion
  • 2 medium Roma tomatoes
  • 2 large Yellow potatoes
  • 4 cups Cooked Rice
  • 3 tablespoons Vegetable oil
  • 3 tablespoons Tamari
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Aji Amarillo paste
  • 2 cloves Garlic
  • 0.25 cup Fresh cilantro
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Instructions

  1. 1Cut the beef into strips and marinate with tamari, red wine vinegar, Aji Amarillo paste, garlic, salt, and pepper for at least 15 minutes.
  2. 2Cut potatoes into fries and fry them until golden brown and crispy. Set aside.
  3. 3Heat vegetable oil in a large wok or skillet over high heat. Stir-fry the marinated beef until browned.
  4. 4Add sliced red onion and tomatoes to the wok and stir-fry for a few minutes until slightly softened but still crisp.
  5. 5Add the fried potatoes to the wok and toss everything together.
  6. 6Serve the Lomo Saltado over cooked rice and garnish with fresh cilantro.
