Lomo Saltado (Dairy-Free & Nut-Free)

A classic Peruvian stir-fry featuring tender beef, onions, peppers, and tomatoes, all wok-tossed with soy sauce and served over crispy potatoes. This recipe is adapted to be dairy-free and nut-free.

Ingredients

  • 1 lb Beef sirloin, thinly sliced
  • 1 large Red onion, sliced
  • 1 large Red bell pepper, sliced
  • 1 large Yellow bell pepper, sliced
  • 2 medium Roma tomatoes, quartered
  • 1/4 cup Soy sauce (wheat-free tamari)
  • 2 tbsp Red wine vinegar
  • 1 tbsp Aji Amarillo paste
  • 2 cloves Garlic, minced
  • 3 tbsp Vegetable oil
  • 2 large Russet potatoes, cut into fries
  • 1/4 cup Fresh cilantro, chopped
  • 4 cups Cooked white rice

Instructions

  1. 1Prepare the fries: Pour 3 tablespoons of vegetable oil into a large, heavy-bottomed skillet. Heat the oil over medium-high heat until it shimmers, about 350°F (175°C). Carefully add the 2 large Russet potatoes, cut into fries, to the hot oil. Fry for 10-15 minutes, turning occasionally, until they are golden brown and crispy. Remove the fries with a slotted spoon and drain them on paper towels. Set aside.
  2. 2Marinate the beef: In a medium bowl, combine the 1 lb of Beef sirloin, thinly sliced, with 1/4 cup Soy sauce (wheat-free tamari), 2 tablespoons Red wine vinegar, 1 tablespoon Aji Amarillo paste, and 2 cloves Garlic, minced. Stir well to coat the beef. Let it marinate for 10 minutes at room temperature.
  3. 3Stir-fry vegetables: Place a wok or a large skillet over high heat. Add the remaining 3 tablespoons of vegetable oil and heat until it just begins to smoke, about 400°F (200°C). Add the 1 large Red onion, sliced, and the 1 large Red bell pepper and 1 large Yellow bell pepper, sliced. Stir-fry for 2-3 minutes until the vegetables are slightly softened but still have a bite, and you can smell their aroma.
  4. 4Cook the beef and tomatoes: Add the marinated beef, including any marinade from the bowl, to the hot wok. Stir-fry for 3-4 minutes, stirring constantly, until the beef is cooked through and has a slightly browned exterior. The internal temperature of the beef should reach 145°F (63°C). Add the 2 medium Roma tomatoes, quartered, to the wok and cook for 1 minute more, just until they begin to soften.
  5. 5Combine and finish: Add the cooked french fries to the wok with the beef and vegetables. Toss everything together gently for about 30 seconds to combine. The dish is ready when everything is heated through.
  6. 6Serve: Divide the 4 cups of Cooked white rice among four plates. Spoon the Lomo Saltado mixture over the rice. Garnish with 1/4 cup Fresh cilantro, chopped, before serving immediately.
