Liberian Rice Bread (Dairy & Nut Free)

Ingredients

  • 2 cups Rice Flour
  • 2 cups Mashed Ripe Bananas
  • 1/4 cup Coconut Oil
  • 1/2 cup Sugar
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Water

Instructions

  1. 1Preheat your oven to 350°F (175°C). Lightly grease a loaf pan using a small amount of the 1/4 cup of coconut oil, then dust it with a small amount of the 2 cups of rice flour, tapping out any excess.
  2. 2In a large mixing bowl, combine the remaining 2 cups of rice flour, 1/2 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Stir these dry ingredients together until they are well mixed.
  3. 3In a separate medium-sized bowl, place the 2 cups of mashed ripe bananas. Add the remaining 1/4 cup of melted coconut oil, 1 teaspoon of vanilla extract, and 1/4 cup of water to the bananas. Stir these wet ingredients together until they are well combined.
  4. 4Pour all of the wet ingredients from the medium bowl into the large bowl with the dry ingredients. Gently mix with a spoon or spatula until the wet and dry ingredients are just combined and no dry streaks of flour remain; do not overmix the batter.
  5. 5Pour the prepared batter evenly into the greased and floured loaf pan. Place the loaf pan into the preheated oven and bake for 45 to 50 minutes at 350°F (175°C), or until a wooden skewer or toothpick inserted into the center comes out clean and the top is golden brown.
  6. 6Carefully remove the loaf pan from the oven and allow the rice bread to cool in the pan for 10 minutes. This step helps the bread set and prevents it from breaking when removed.
  7. 7After 10 minutes, carefully invert the loaf pan to release the bread onto a wire rack. Let the bread cool completely on the wire rack before slicing and serving to ensure the texture is firm and not gummy.
