Ingredients

  • 1.5 cups Brown or Green Lentils
  • 1 large Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 4 cloves Garlic
  • 1 can (14oz) Diced Tomatoes
  • 1 tsp Smoked Paprika
  • 1/2 tsp Cumin
  • 6 cups Vegetable Broth
  • 2 tbsp Olive Oil
  • 1 leaf Bay Leaf
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Rinse lentils under cold water.
  2. 2Heat olive oil in a large pot. Sauté chopped onion, carrots, and celery until softened.
  3. 3Add minced garlic and cook for another minute.
  4. 4Stir in diced tomatoes, smoked paprika, cumin, salt, and pepper.
  5. 5Add lentils, vegetable broth, and bay leaf.
  6. 6Bring to a boil, then reduce heat and simmer for 40-45 minutes, or until the lentils are tender.
  7. 7Remove bay leaf before serving.
