Lentejas Colombianas (Colombian Lentil Stew)

Ingredients

  • 1 cup Lentils
  • 6 cups Water
  • 1 medium Onion
  • 1 medium Red bell pepper
  • 3 cloves Garlic
  • 1 large Tomato
  • 1 medium Carrot
  • 1 medium Potato
  • 1 tsp Cumin
  • 0.5 tsp Oregano
  • 0.25 cup Cilantro
  • 2 tbsp Vegetable oil

Instructions

  1. 1Rinse lentils in a colander.
  2. 2Heat vegetable oil in a large pot over medium heat. Add onion, red bell pepper, and garlic. Cook until softened, about 5 minutes.
  3. 3Add tomato, carrot, and potato. Cook for another 5 minutes.
  4. 4Stir in lentils, water, cumin, and oregano. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until lentils are tender.
  5. 5Stir in cilantro and serve hot.
