Lentejas Colombianas (Colombian Lentil Soup)

Ingredients

  • 2 cups Lentils
  • 8 cups Water
  • 1 medium Carrot, diced
  • 1 medium Potato, diced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Cumin
  • 1/2 tsp Paprika
  • 1 leaf Bay leaf
  • 2 tbsp Vegetable oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2 tbsp Cilantro, chopped

Instructions

  1. 1Rinse the lentils and pick out any debris.
  2. 2In a large pot, heat the vegetable oil over medium heat. Sauté the chopped onion and minced garlic until softened.
  3. 3Add the diced carrot and potato and cook for another 5 minutes.
  4. 4Add the lentils, water, cumin, paprika, bay leaf, salt, and pepper. Bring to a boil.
  5. 5Reduce heat to low, cover, and simmer for 30-40 minutes, or until the lentils are tender.
  6. 6Remove the bay leaf. Stir in the chopped cilantro before serving.
