Ingredients

  • 1.5 lbs Chicken Breast
  • 3 tablespoons Olive Oil
  • 4 tablespoons Lemon Juice
  • 4 cloves Garlic
  • 1 teaspoon Paprika
  • 0.5 teaspoon Turmeric
  • 0.5 teaspoon Cumin
  • 0.25 teaspoon Coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 8 each Wooden Skewers
  • 2 cups Vegetables

Instructions

  1. 1In a medium bowl, whisk together the 3 tablespoons of olive oil, 4 tablespoons of lemon juice, 4 cloves of minced garlic, 1 teaspoon of paprika, 0.5 teaspoon of turmeric, 0.5 teaspoon of cumin, 0.25 teaspoon of coriander, 1 teaspoon of salt, and 0.5 teaspoon of black pepper until well combined.
  2. 2Add the 1.5 lbs of chicken breast, cut into 1.5-inch cubes, to the bowl with the marinade. Toss the chicken cubes thoroughly to ensure they are completely coated. Cover the bowl tightly and place it in the refrigerator to marinate for at least 2 hours, or preferably overnight.
  3. 3If using wooden skewers, place the 8 each wooden skewers in water to soak for at least 30 minutes to prevent them from burning on the grill. Prepare your 2 cups of vegetables by cutting them into bite-sized pieces suitable for skewering.
  4. 4Preheat your grill to medium heat, which is approximately 350-400°F (175-200°C). Thread the marinated chicken cubes and the prepared vegetables onto the soaked wooden skewers, alternating between chicken and vegetables.
  5. 5Place the assembled skewers on the preheated grill. Grill for 10-15 minutes, turning the skewers occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), and the vegetables are tender and slightly charred.
  6. 6Remove the skewers from the grill and let them rest for 5 minutes before serving. This allows the juices in the chicken to redistribute, making it more tender and flavorful.
