Ingredients

  • 0.5 cup Short-Grain Rice
  • 2 cups Water
  • 4 cups Whole Milk
  • 0.5 cup Sugar
  • 1 tablespoon Rose Water
  • 0.5 teaspoon Ground Cinnamon
  • 0.25 cup Chopped Pistachios

Instructions

  1. 1Rinse the 0.5 cup Short-Grain Rice under cold water until the water runs clear. Combine the rinsed rice with the 2 cups Water in a medium saucepan. Bring the mixture to a boil over high heat, then reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until the rice is tender and all the water has been absorbed.
  2. 2Add the 4 cups Whole Milk and the 0.5 cup Sugar to the saucepan with the cooked rice. Increase the heat to medium and bring the mixture to a gentle simmer, stirring occasionally to prevent sticking. Continue to simmer gently, stirring often, for about 30 minutes, or until the pudding has thickened to your desired consistency. The pudding should coat the back of a spoon.
  3. 3Remove the saucepan from the heat. Stir in the 1 tablespoon Rose Water and the 0.5 teaspoon Ground Cinnamon until well combined.
  4. 4Pour the rice pudding into four individual serving bowls.
  5. 5Garnish each bowl with the 0.25 cup Chopped Pistachios.
  6. 6Serve the Lebanese Rice Pudding warm or chilled.
