Lebanese Rice Pudding (Riz bi Haleeb) with Coconut

Ingredients

  • 1/2 cup Arborio Rice
  • 4 cups Coconut Milk
  • 1/2 cup Sugar
  • 2 tablespoons Rose Water
  • 1 tablespoon Orange Blossom Water
  • 2 tablespoons Shredded Coconut
  • 2 tablespoons Pistachios (chopped)

Instructions

  1. 1Rinse the rice under cold water until the water runs clear.
  2. 2In a medium saucepan, combine the rice and coconut milk. Bring to a simmer over medium heat.
  3. 3Reduce heat to low, cover, and cook for 30-40 minutes, or until the rice is very soft and the mixture has thickened, stirring occasionally to prevent sticking.
  4. 4Stir in the sugar, rose water, and orange blossom water. Cook for another 5 minutes, stirring constantly, until the sugar is dissolved.
  5. 5Remove from heat and let cool slightly. The pudding will thicken as it cools.
  6. 6Pour into individual serving dishes and garnish with shredded coconut and chopped pistachios.
  7. 7Refrigerate for at least 2 hours before serving.
