Lebanese Rice Pilaf with Vermicelli

Ingredients

  • 2 cups Long-grain rice
  • 0.5 cup Vermicelli noodles, broken into small pieces
  • 2 tbsp Olive oil
  • 3 cups Vegetable broth
  • 1 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Rinse the rice under cold water until the water runs clear.
  2. 2Heat olive oil in a pot over medium heat. Add the broken vermicelli noodles and cook until golden brown, stirring constantly.
  3. 3Add the rinsed rice to the pot and cook for another minute, stirring constantly.
  4. 4Pour in the vegetable broth, add salt and pepper, and bring to a boil.
  5. 5Reduce heat to low, cover the pot, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. 6Fluff the rice with a fork before serving.
