Lebanese Potato Salad (Batata Harra)

Ingredients

  • 1.5 lbs Potatoes
  • 0.25 cup Olive oil
  • 4 cloves Garlic
  • 1 tsp Red chili flakes
  • 0.5 cup Fresh cilantro
  • 2 tbsp Lemon juice
  • 0.5 tsp Salt

Instructions

  1. 1Peel and cube the potatoes into 1-inch pieces.
  2. 2Boil potatoes in salted water until tender, about 15-20 minutes. Drain well.
  3. 3While potatoes are boiling, heat olive oil in a large skillet over medium heat.
  4. 4Add minced garlic and red chili flakes to the skillet and sauté for 1 minute, until fragrant.
  5. 5Add boiled potatoes to the skillet and toss to coat with the garlic-chili oil. Cook, stirring occasionally, until potatoes are slightly crispy and golden brown, about 5-7 minutes.
  6. 6Remove from heat and stir in fresh cilantro and lemon juice.
  7. 7Season with salt to taste. Serve warm.
