Lebanese Mujadara (Lentils and Rice)

Ingredients

  • 1 cup Brown lentils
  • 1 cup Basmati rice
  • 3 cups Water
  • 4 tbsp Olive oil
  • 2 large Onions
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 cup Fresh parsley

Instructions

  1. 1Rinse lentils and rice separately.
  2. 2In a pot, combine lentils, rice, and water. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils and rice are tender and water is absorbed.
  3. 3While lentils and rice are cooking, thinly slice onions.
  4. 4Heat olive oil in a large skillet over medium heat. Add onions and cook until caramelized, about 20-25 minutes, stirring occasionally.
  5. 5Stir cumin, salt, and pepper into the cooked lentils and rice.
  6. 6Serve lentils and rice topped with caramelized onions and fresh parsley.
