Ingredients

  • 1 cup Red Lentils
  • 6 cups Water
  • 1 medium Onion
  • 1 medium Carrot
  • 2 stalks Celery
  • 2 tbsp Olive Oil
  • 1 tsp Cumin
  • 1/2 tsp Turmeric
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 cup Lemon Juice
  • 2 tbsp Fresh Parsley

Instructions

  1. 1Rinse the red lentils under cold water.
  2. 2Heat olive oil in a large pot over medium heat. Add the diced onion, carrot, and celery and sauté until softened, about 5 minutes.
  3. 3Add the rinsed lentils, water, cumin, turmeric, salt, and pepper to the pot. Bring to a boil, then reduce heat to low and simmer for 30 minutes, or until the lentils are tender and the soup has thickened.
  4. 4Stir in the lemon juice.
  5. 5Serve hot, garnished with fresh parsley.
