Ingredients

  • 1 cup Brown or green lentils
  • 6 cups Vegetable broth
  • 1 medium Onion, chopped
  • 1 medium Carrot, chopped
  • 1 stalk Celery, chopped
  • 3 cloves Garlic, minced
  • 1 tsp Cumin
  • 0.5 tsp Turmeric
  • 0.25 cup Lemon juice
  • 2 tbsp Olive oil
  • 0.75 tsp Salt
  • 0.5 tsp Pepper
  • 0.25 cup Fresh cilantro, chopped

Instructions

  1. 1Rinse the lentils thoroughly under cold water.
  2. 2In a large pot, heat olive oil over medium heat. Add chopped onion, carrot, and celery and cook until softened, about 5-7 minutes.
  3. 3Add minced garlic, cumin, and turmeric. Cook for another minute until fragrant.
  4. 4Add the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  5. 5Stir in lemon juice, salt, and pepper.
  6. 6Serve hot, garnished with fresh cilantro.
